Delightful oven shrimp skewers with tender shrimp, vibrant veggies, and a zesty marinade—perfect for any occasion.

  • 3 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon minced garlic
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1.5 lb jumbo shrimp, peeled & deveined, tail-on
  • 1 medium zucchini, cut into round slices
  • 1 medium red onion, cut into cubes
  • Fresh dill to garnish
  • Lemon wedges to garnish

Instructions

  1. Start by preparing the marinade. In a small bowl, mix together lemon juice, olive oil, paprika, onion powder, dried oregano, minced garlic, lemon zest, salt, and ground black pepper.
  2. Pour the marinade over the peeled and deveined shrimp in a mixing bowl, tossing gently until fully coated. Reserve about 2 tablespoons of marinade for brushing later and allow to marinate for at least 30 minutes.
  3. Now, it’s time for assembly! Start threading the shrimp onto skewers, alternating with slices of zucchini and chunks of red onion.
  4. Place the assembled skewers on a baking rack or pan. Set your oven to broil high and cook the skewers for 3-5 minutes on each side, turning often to guarantee even cooking.
  5. Once cooked, brush the skewers with reserved marinade and garnish with fresh dill and lemon wedges.

Notes

Soak wooden skewers in water for 30 minutes prior to assembling to prevent burning.
