This Parmesan Baked Cod combines the mild, flaky texture of fresh cod with a crisp, golden layer of Parmesan cheese, perfect for any dinner occasion.

Ingredients

  • 3/4 cup freshly grated Parmesan cheese
  • 1/2 lemon (zest and juice)
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon garlic powder
  • 1 1/4 teaspoons paprika
  • 3 tablespoons salted butter (optional: up to 5 tablespoons for extra butter sauce)
  • 1 1/2 pounds fresh cod

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grease a rimmed baking sheet with cooking spray.
  3. Combine the Parmesan cheese, garlic powder, and paprika on a dinner plate.
  4. Rinse the cod in cold water, checking for bones, and pat dry with paper towels.
  5. Melt the butter in a small pan or microwave, then set aside.
  6. Dip each piece of cod in melted butter, coating both sides.
  7. Dredge the cod in the cheese mixture, pressing gently to help the coating stick.
  8. Place the coated cod on the baking sheet and drizzle any remaining butter over the top.
  9. Bake for about 15 minutes or until the fish flakes easily with a fork.
  10. Squeeze fresh lemon juice over the baked cod before serving.
