Delightful Peach Cupcakes infused with the sweetness of ripe peaches and topped with creamy frosting, perfect for any occasion.

  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup canned peach puree (or fresh pureed peaches)
  • 1/4 cup milk
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar
  • 2 oz cream cheese, softened
  • 1 tsp vanilla extract (for frosting)
  • 2 tbsp peach puree (or fresh peach juice)
  • A pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Beat together the softened butter and sugar until light and fluffy in a large bowl.
  4. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
  5. Combine the dry ingredients with the butter mixture in three parts, alternating with sour cream and milk.
  6. Stir in the peach puree until just mixed in.
  7. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  8. Bake for 18-20 minutes, until a toothpick comes out clean.
  9. Cool the cupcakes in the tin before transferring to a wire rack.
  10. Beat together the frosting ingredients until smooth and fluffy.
  11. Pipe or spread the frosting on cooled cupcakes as desired.

Ensure all ingredients are at room temperature for easier mixing. Consider adding chopped peaches to the batter for added texture.
