Deliciously soft and chewy cookies with a creamy peanut butter base, topped with luscious molten caramel and a hint of sea salt.

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup caramel candies, unwrapped
  • 1 tablespoon milk
  • Optional: sea salt for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine creamy peanut butter, granulated sugar, egg, vanilla extract, baking soda, and salt in a large mixing bowl until smooth.
  3. Scoop tablespoon-sized portions of dough and roll into balls, placing them on the prepared baking sheet.
  4. Press each ball with a fork to create a crisscross pattern.
  5. Bake in the preheated oven for 10-12 minutes until the edges are light golden.
  6. Cool on the baking sheet for a few minutes.
  7. Melt the caramel candies with milk in a microwave-safe bowl, heating in intervals until smooth.
  8. Drizzle the melted caramel over the warm cookies and sprinkle with sea salt if desired.
  9. Allow the caramel to set before serving.

Notes

For an extra touch, use crunchy peanut butter or add chocolate chips to the dough. Store cookies in an airtight container for up to one week.
