A delightful dessert featuring a light, airy cake infused with crushed pineapple and topped with rich cream cheese frosting.

  • 1 box yellow cake mix
  • 1 cup crushed pineapple, drained
  • 1/2 cup heavy cream
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup whipped topping
  • 1/4 cup shredded coconut (optional for garnish)
  • Maraschino cherries (for garnish, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan by greasing and lightly flouring it.
  2. Follow the package instructions for the yellow cake mix, but before you pour the batter into the baking pan, make sure to fold in the drained crushed pineapple.
  3. Pour the cake batter into your prepared baking pan, smoothing it evenly across the surface, and bake for 25-30 minutes.
  4. Allow the cake to cool completely in the pan on a wire rack.
  5. In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until the mixture is smooth and creamy.
  6. Gently fold in the whipped topping until everything is well combined.
  7. Spread the cream cheese mixture over the top of the cooled cake.
  8. Sprinkle with shredded coconut and top with maraschino cherries, if desired.
  9. Refrigerate the cake for at least 120 minutes before serving.

Notes

For added flavor, consider using some pineapple juice in the frosting. You can experiment with additional fruit toppings for more tropical flavors.
