  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 teaspoons vanilla extract
  • 1 large egg, beaten
  • 1/2 cup sour cream
  • 1 can (20 ounces) crushed pineapple, drained
  • 1 1/2 cups powdered sugar
  • 23 tablespoons reserved pineapple juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Whisk together the flour, baking soda, and salt in a medium bowl.
  3. Beat the cream cheese, granulated sugar, and vanilla extract until creamy in a large bowl.
  4. Add the beaten egg, sour cream, and drained pineapple to the cream cheese mixture and mix well.
  5. Gradually incorporate the dry ingredients into the wet mixture.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 60-70 minutes, until a toothpick comes out clean.
  8. Whisk together the powdered sugar and reserved pineapple juice to create a glaze.
  9. Drizzle the glaze over the bread after cooling for 10 minutes.
  10. Allow the bread to cool completely before slicing.

Notes

For extra crunch, consider adding crushed walnuts or pecans. You can substitute half of the granulated sugar with brown sugar for a deeper flavor.
