A warm and hearty soup featuring delightful ravioli in a savory broth, perfect for cozy family dinners.

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1 cup spinach, chopped
  • 1 package (9 oz) frozen cheese ravioli
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • Fresh Parmesan cheese, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté for 3-4 minutes.
  3. Introduce the minced garlic and sauté until fragrant.
  4. Pour in the can of diced tomatoes and stir.
  5. Add the broth, oregano, basil, salt, and pepper, then bring to a boil.
  6. Reduce the heat to a gentle simmer and allow flavors to meld.
  7. Add the frozen cheese ravioli and cook for 4-5 minutes.
  8. Stir in the chopped spinach and cook for another 2-3 minutes.
  9. Ladle into bowls and garnish with freshly grated Parmesan cheese.

Notes

Serve with crusty sourdough bread or garlic knots. This soup makes great leftovers!
