A rich and luxurious Red Velvet Loaf Cake with a tender crumb and velvety cream cheese frosting.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring
  • 1/2 cup buttermilk
  • 1 tsp white vinegar
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter for frosting
  • 23 cups powdered sugar
  • 1 tsp vanilla extract for frosting
  • A pinch of salt for frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your loaf pan by greasing and flouring it.
  2. Whisk together the flour, cocoa powder, baking powder, baking soda, and salt in a medium bowl.
  3. Beat the softened butter and sugar in a large bowl until light and fluffy, around 2-3 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract and red food coloring.
  5. Mix in the buttermilk and vinegar until smooth.
  6. Fold in the dry ingredients until just combined, being careful not to overmix.
  7. Pour the batter into the prepared loaf pan and bake for 55-65 minutes, until a toothpick comes out clean.
  8. Cool the cake in the pan for 10 minutes, then transfer to a wire rack.
  9. Beat the cream cheese and butter together, then gradually add powdered sugar, mixing until desired consistency is achieved.
  10. Spread the cream cheese frosting evenly over the cooled cake.

Notes

For best results, use room temperature ingredients and avoid overmixing the batter.
