A delightful salad featuring juicy blueberries, sweet peaches, and crunchy cucumbers, topped with creamy feta and a tangy vinaigrette. Perfect for summer picnics and gatherings.

  • 1 pint fresh blueberries
  • 2 peaches, diced
  • 2 Persian cucumbers, sliced
  • 1/2 cup crumbled feta
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 tablespoon finely chopped basil
  • Kosher salt and fresh ground black pepper to taste

Instructions

  1. Combine the fresh blueberries, diced peaches, sliced cucumbers, and crumbled feta in a large serving bowl.
  2. In a jar with a lid, combine the fresh lemon juice, dijon mustard, honey, olive oil, finely chopped basil, kosher salt, and freshly ground black pepper.
  3. Shake or whisk together until the vinaigrette is well combined and emulsified.
  4. Pour the vinaigrette over the salad mixture, and gently mix everything together until the fruits and feta are evenly coated.
  5. Taste for seasoning, adjusting with more salt and pepper as desired.
  6. Garnish with extra basil if you like, and serve immediately, or cover and refrigerate until ready to enjoy.

Notes

For added crunch, sprinkle some toasted almonds or walnuts on top. You can make it a heartier meal by adding cooked quinoa or brown rice.
