A delightful dessert featuring tart rhubarb enveloped in a sweet, crumbly topping, perfect for gatherings or quiet evenings at home.

Ingredients

  • 2 pounds rhubarb, cut into 1-inch pieces
  • 1 1/4 cups white sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cardamom
  • 1 cup all-purpose flour for topping
  • 1/2 teaspoon salt
  • 1 cup light brown sugar
  • 8 tablespoons butter, cut into cubes

Instructions

  1. Preheat the oven to 375°F.
  2. Mix together the rhubarb, white sugar, 1/4 cup of flour, vanilla extract, and cardamom in a medium-sized bowl.
  3. Spoon the mixture into a 9×13-inch baking dish.
  4. Pulse together 1 cup of flour, salt, and brown sugar in a food processor.
  5. Add the butter and pulse until the pieces of butter are pea-sized.
  6. Spread the topping mixture over the rhubarb mixture.
  7. Place in the oven and bake for 35 to 45 minutes.
  8. Let cool for at least 30 minutes before serving.

Notes

For added flavor, consider mixing in fresh strawberries or raspberries with the rhubarb.
