  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Fresh chopped parsley for serving
  • 6 ounces feta cheese
  • 2 ounces cream cheese
  • 2 tablespoons lemon juice
  • 1/3 cup olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Prepare the carrots by washing and peeling them thoroughly.
  3. Mix the seasonings: In a small bowl, combine olive oil, honey, cumin, paprika, cinnamon, salt, and black pepper.
  4. Coat the carrots with the seasoning mixture until completely covered.
  5. Roast the carrots in the preheated oven for 20-25 minutes until tender and charred.
  6. Prepare the whipped feta dip in a food processor by blending feta cheese, cream cheese, lemon juice, olive oil, salt, and pepper until smooth.
  7. Serve the roasted carrots on a platter garnished with parsley alongside the whipped feta dip.

Notes
