  • 1 tablespoon honey
  • 1 teaspoon balsamic vinegar
  • Pinch of salt
  • 1 cup ricotta cheese
  • 1 tablespoon honey (for the ricotta)
  • 1/2 teaspoon vanilla extract
  • 4 slices of crusty bread, toasted
  • Fresh thyme or basil leaves (optional)
  • Extra honey for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Toss strawberries with honey, balsamic vinegar, and salt in a mixing bowl.
  3. Spread the strawberries on a baking sheet lined with parchment paper.
  4. Roast for 15-20 minutes, stirring halfway through, until syrupy.
  5. Combine ricotta, honey, and vanilla extract in a mixing bowl.
  6. Whip the mixture until smooth and airy.
  7. Toast bread slices until golden brown.
  8. Spread whipped ricotta on each slice of toast.
  9. Spoon roasted strawberries onto the ricotta.
  10. Garnish with thyme or basil leaves and drizzle extra honey on top.
