A vibrant and flavorful pasta dish combining rotini with zesty diced tomatoes and green chilies, perfect for busy weeknights.

Ingredients

  • 8 oz rotini pasta
  • 1 can (10 oz) diced tomatoes and green chilies (Rotel)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: cooked ground beef or sausage

Instructions

  1. Cook the Rotini in a large pot of salted boiling water until al dente, then drain and set aside.
  2. Sauté the diced onion and bell pepper in olive oil over medium heat for about five minutes, adding minced garlic in the last minute.
  3. Incorporate the diced tomatoes and green chilies, adding optional meat if desired and simmer for five minutes.
  4. Combine the drained rotini pasta with the mixture, mixing thoroughly and adding reserved pasta water if needed.
  5. Melt the cheese over the pasta, covering the skillet and letting it sit on low heat until gooey.
  6. Season with salt and pepper to taste, serve hot, and enjoy!

Notes

For extra flavor, add spices like cumin or paprika. Leftovers can be stored in an airtight container.
