A delightful combination of succulent shrimp, creamy avocado, and crisp cucumber, elegantly arranged for a refreshing appetizer or snack.

  • 20 Shrimp (peeled, deveined, and tails removed, about 1 pound)
  • 2 Teaspoons Cajun Seasoning
  • 1 Tablespoon Mild Tasting Oil (such as vegetable or canola)
  • 1 Avocado
  • 2 Teaspoons Lime Juice
  • 1/4 Teaspoon Salt
  • 1 Tablespoon Fresh Cilantro (chopped)
  • 1/4 Cup Yellow Onions (chopped)
  • 1 Cucumber (sliced 1/4″ thick)
  • Parmesan Crisps (broken into small pieces)

Instructions

  1. Pat the shrimp dry with paper towels and place them in a large bowl. Sprinkle with Cajun seasoning and toss to ensure they are evenly coated.
  2. Heat the oil in a skillet over medium heat. Once hot, add the seasoned shrimp and sear for about 2-3 minutes on each side until golden and cooked through.
  3. While the shrimp cook, slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Add lime juice, salt, and chopped onions, then mash until smooth and creamy.
  4. Assemble the bites by laying cucumber slices on a serving dish, adding a dollop of avocado mixture onto each slice, and topping with the cooked shrimp. Finish with a sprinkle of cilantro and Parmesan crisps.
  5. Serve immediately while the shrimp are warm for the best flavor and texture.

Notes

For extra kick, add hot sauce to the avocado mixture. Substitute lime juice for lemon juice if desired.
