  • 1/2 tablespoon whole cumin seeds, toasted and fragrant
  • 1/2 teaspoon coriander seeds, toasted for warmth
  • 2 cloves garlic, pungent and aromatic
  • 2 serrano green chiles, vibrant and spicy, stemmed
  • 1 bunch cilantro, both leaves and stems for a fresh herbal note
  • Kosher salt, to taste
  • 1/2 cup vegetable oil, smooth and versatile
  • 2 pounds fresh sardines, cleaned, scaled, and gutted, showcasing their ocean freshness

Instructions

  1. Combine the fresh lemon juice, ground cumin, ground coriander, garlic, serrano chiles, cilantro, and kosher salt in a food processor. Pulse until coarse. Slowly drizzle in the vegetable oil while processing until smooth.
  2. Prepare the sardines by threading them onto skewers and seasoning generously with salt. Preheat your grill or cast iron grill pan to a medium-high heat.
  3. Grill the sardines for about two minutes on each side until charred and fully cooked.
  4. Drizzle the vibrant green sauce over grilled sardines and serve hot with fresh lemon wedges.

Notes

Use fresh sardines for the best flavor. Customize the spice level by adjusting the number of serrano chiles.
