A vibrant and refreshing cucumber salad with a zesty dressing that offers a burst of flavor and crunch.

  • 4 Persian cucumbers (or 2 English cucumbers)
  • 1/2 teaspoon sea salt
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon chili oil
  • 2 cloves garlic, finely minced
  • 1 tablespoon sugar or honey
  • 2 green onions, finely sliced
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon toasted sesame seeds
  • 1/2 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Begin by smashing the cucumbers with the flat side of a chef’s knife and cut into bite-sized pieces.
  2. Once cut, sprinkle the sea salt over the cucumber pieces and let them rest in a colander for about 10 minutes.
  3. While the cucumbers are resting, prepare the dressing by mixing soy sauce, rice vinegar, sesame oil, chili oil, minced garlic, and sugar in a bowl.
  4. After resting, pat the cucumbers dry and transfer them to a mixing bowl, adding green onions and cilantro, then drizzle the dressing over.
  5. For the finishing touches, serve topped with toasted sesame seeds and optional red pepper flakes. Chill for about 30 minutes if desired.
