A delightful dish featuring golden, crunchy fried cod fillets with a spicy beer batter and a crispy cornflake coating.

  • 1 1/2 cups of your favorite beer
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 pound cod fillets
  • 2 cups crushed cornflake crumbs
  • 1 teaspoon Cajun seasoning
  • 1 quart oil for frying

Instructions

  1. Beat together the beer, flour, egg, garlic powder, salt, and pepper in a medium bowl until smooth.
  2. Add the cod fillets, ensuring they are well coated in the batter.
  3. Mix the cornflake crumbs with the Cajun seasoning in a separate bowl until combined.
  4. Dip the coated cod fillets into the crumb mixture, ensuring all sides are well coated.
  5. Heat the oil in a large skillet or deep fryer to 365°F (185°C).
  6. Carefully add the coated cod fillets to the hot oil and fry until golden brown.
  7. Drain on a paper towel-lined plate to remove excess oil.

Notes

For added heat, consider adding cayenne pepper to the batter or crumb mixture. Use an instant-read thermometer for accurate frying temperature.
