  • 2 tablespoons finely chopped jalapeños
  • 2 tablespoons fresh cilantro
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 large egg
  • 1/2 cup crushed tortilla chips
  • Mini phyllo cups or wonton wrappers (optional)
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Combine the sweet corn kernels, shredded cheddar cheese, and cream cheese in a large mixing bowl.
  3. Add the finely chopped jalapeños and fresh cilantro to the mixture.
  4. Season with chili powder, cumin, garlic powder, salt, and pepper.
  5. Stir in the beaten egg to bind the mixture.
  6. Scoop approximately one tablespoon of the mixture and roll into balls, then roll in crushed tortilla chips.
  7. Arrange the corn bites on the prepared baking sheet.
  8. Bake for 18-20 minutes or until golden and crispy.
  9. Cool for five minutes and serve warm with lime wedges, salsa, or spicy mayo.
