Spinach Lasagna with Ricotta & 3 Cheeses

A mouthwatering spinach lasagna featuring layers of tender pasta, creamy ricotta, mozzarella, parmesan, and vibrant spinach, all enveloped in seasoned marinara sauce.

Ingredients

  • 9 lasagna noodles (cooked until al dente)
  • 1 1/2 cups creamy ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 4 cups fresh spinach, chopped
  • 2 cups marinara sauce
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1 teaspoon dried basil

Instructions

  1. Heat two tablespoons of butter in a large skillet over medium heat.
  2. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add in the chopped spinach and cook until wilted, about 3-4 minutes.
  4. Combine the ricotta cheese with half of the mozzarella and half of the parmesan in a mixing bowl.
  5. Season this mixture with salt, pepper, and dried basil.
  6. Preheat your oven to 375°F (190°C) and spread a thin layer of marinara sauce in a baking dish.
  7. Layer 3 cooked lasagna noodles on top of the sauce, followed by a portion of the spinach and cheese mixture, then more marinara sauce.
  8. Repeat the layering process until all ingredients are used, finishing with noodles topped with marinara sauce and the remaining mozzarella and parmesan.
  9. Cover the baking dish with aluminum foil and bake for 30-35 minutes.
  10. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.

Notes

For extra flavor, consider adding fresh herbs or substituting vegetables like mushrooms or zucchini. Use no-boil lasagna noodles for quicker preparation.
