A rich, creamy Strawberry Cheesecake adorned with fresh strawberries, perfect for any occasion.

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 ounces softened cream cheese
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/2 cup fresh strawberries, pureed
  • 1 cup sliced strawberries for garnishing
  • 1/4 cup strawberry sauce (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Grease a 9-inch springform pan.
  3. Combine the graham cracker crumbs, sugar, and melted butter in a medium bowl.
  4. Press the crumb mixture into the bottom of the springform pan.
  5. Beat the softened cream cheese until smooth and creamy.
  6. Add the granulated sugar and vanilla extract, mixing until silky.
  7. Add the eggs, one at a time, mixing on low speed.
  8. Stir in the sour cream and pureed strawberries.
  9. Pour the cheesecake filling over the crust.
  10. Bake for 50-60 minutes until the center is slightly jiggly.
  11. Cool the cheesecake in the oven with the door ajar for 1 hour.
  12. Refrigerate for at least 4 hours or overnight.
  13. Top with sliced fresh strawberries before serving.
