  • 1 1/2 cups crushed shortbread cookies
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 cup sour cream
  • 1/4 cup heavy cream
  • 1 1/2 cups fresh strawberries, sliced
  • 2 tbsp sugar
  • 1 tsp lemon juice

Instructions

  1. Make the crust: Mix the crushed shortbread cookies with melted butter in a bowl and press into a springform pan. Chill.
  2. Prepare the filling: Beat cream cheese, sugar, and vanilla until smooth, then add eggs one at a time. Fold in sour cream and heavy cream.
  3. Bake the cheesecake: Pour filling over crust and bake at 325°F (160°C) for 50-55 minutes. Cool to room temperature and refrigerate for at least 240 minutes.
  4. Prepare the topping: Mix sliced strawberries with sugar and lemon juice, letting sit for 30 minutes.
  5. Top cheesecake: Spoon the strawberry mixture over the cheesecake before serving.
