A delightful summer treat, this Strawberry Swirl Ice Cream features a rich creamy base combined with a sweet and tangy strawberry swirl, perfect for family gatherings or cozy nights.

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh strawberries, hulled and mashed
  • 2 tablespoons sugar (for the strawberry swirl)
  • 1 tablespoon lemon juice

Instructions

  1. Combine the heavy cream, whole milk, sugar, and vanilla extract in a large bowl. Stir until the sugar dissolves completely.
  2. Pour the creamy mixture into your ice cream maker and churn according to the manufacturer’s instructions, typically for about 20-25 minutes.
  3. Prepare the strawberry swirl by placing the mashed strawberries in a small saucepan over medium heat. Add sugar and lemon juice, stirring occasionally and cooking for about 5-7 minutes until syrupy.
  4. Remove from heat and let the strawberry mixture cool.
  5. Transfer the churned ice cream to an airtight container. Drizzle the cooled strawberry swirl over the top and gently swirl it in.
  6. Freeze the ice cream for at least 240 minutes, or until firm enough to scoop.
  7. Scoop the ice cream into bowls or cones and enjoy.

Notes

For best results, use ripe strawberries. If not in season, consider thawed frozen strawberries. Enhance flavor with a pinch of sea salt.
