4 slices of your favorite bread (sourdough or whole wheat)
1/2 cup ricotta cheese
1/4 cup sun-dried tomatoes, chopped
1 cup fresh spinach, chopped
2 tbsp butter, softened
1 cup shredded mozzarella cheese
1 tbsp olive oil (optional)
Salt and pepper, to taste
Instructions
Prepare the filling by combining the ricotta cheese, chopped sun-dried tomatoes, and fresh spinach in a small bowl. Season with salt and pepper to taste.
Spread a generous portion of the ricotta mixture onto one slice of bread, then add a layer of shredded mozzarella cheese.
Top with another slice of bread to create a sandwich.
Heat a skillet over medium heat and spread softened butter on the outside of each sandwich.
Grill for about 3 to 5 minutes on each side until the bread is golden brown and the cheese is melted.
Remove from the pan, cut in half, and serve hot.
