A deliciously indulgent dessert that combines ripe pears with a buttery cake, creating a super moist and flavorful treat.

  • 2 ¼ cups cake or all-purpose flour, sifted
  • 1 ½ cups fine granulated white sugar
  • ½ cup unsalted butter, soft
  • ⅓ cup canola or vegetable oil
  • 3 teaspoons baking powder
  • 12 tablespoons vanilla extract
  • 4 large eggs
  • ½ cup whole fat milk
  • 3 ripe pears, peeled and thinly sliced
  • ⅛ teaspoon salt
  • 1 teaspoon lemon zest (optional)
  • 2 tablespoons confectioner sugar for dusting
  • ¼ cup brown sugar (for topping)
  • ¾ teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and slice the pears into thin wedges.
  3. Combine the softened butter and fine granulated sugar in a bowl and whip until fluffy.
  4. Add vanilla extract, optional lemon zest, and eggs, and mix until pale and fluffy.
  5. Gradually mix in the baking powder, sifted flour, and salt, followed by the whole fat milk and canola oil.
  6. Prepare a 10 x 3-inch round springform baking pan and pour the batter, smoothing the top.
  7. Arrange the sliced pears on top and sprinkle with cinnamon and brown sugar.
  8. Bake in the preheated oven for 1 hour.
  9. Check for doneness with a skewer; it should come out clean.
  10. Cool the cake for up to 1 hour, covered with a kitchen towel.
  11. Dust with confectioner sugar before serving.

Notes

Store leftovers in an airtight container for up to three days; for longer storage, freeze slices wrapped in plastic wrap for up to a month.
