Delicious teriyaki chicken paired with sweet pineapple and vibrant vegetables, all cooked to perfection in foil packets.

  • 2 boneless, skinless chicken breasts
  • 1 cup fresh pineapple chunks
  • 1/4 cup teriyaki sauce
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 carrot, thinly sliced
  • 1 zucchini, sliced
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Aluminum foil for wrapping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut two large pieces of aluminum foil and lay them flat.
  3. Place each chicken breast in the center of the foil pieces, drizzling a tablespoon of olive oil on top.
  4. Top each chicken breast with pineapple chunks, bell pepper slices, carrot ribbons, and zucchini.
  5. Pour teriyaki sauce evenly over all ingredients.
  6. Fold the sides of the foil over the chicken and vegetables to create sealed packets.
  7. Place the foil packets on a baking sheet and bake for about 25-30 minutes.
  8. Carefully open the packets, being cautious of the steam, and garnish with green onions before serving.

Notes

Ensure chicken breasts are of similar size for even cooking. Use heavy-duty aluminum foil to prevent tearing.
