A tantalizing dish that harmoniously marries the sweetness of pineapple with the umami flavors of shrimp and teriyaki sauce.

  • 1/2 lb shrimp, peeled & deveined
  • 1/4 cup teriyaki sauce
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 1 tsp sesame oil
  • 1 clove garlic, minced
  • 1 cup cooked rice
  • 1/2 cup diced pineapple
  • 1/4 cup diced bell peppers
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp chopped green onions
  • 1/4 cup mashed avocado (optional)
  • Sesame seeds for garnish

Instructions

  1. Begin your journey by marinating the shrimp. In a medium bowl, combine the teriyaki sauce, soy sauce, honey, sesame oil, and minced garlic. Add the shrimp and allow them to soak in this aromatic mixture for at least 15 minutes.
  2. After the shrimp have marinated, heat a non-stick skillet over medium heat. Sauté the shrimp until they turn a beautiful golden brown and are cooked through, approximately 2-3 minutes per side.
  3. In another pan, stir-fry the diced pineapple, bell peppers, and cooked rice. Add a splash of soy sauce and sesame oil to bring everything together.
  4. To assemble your rice stacks, take a round mold and fill it with the rice mixture, pressing down firmly to form a compact layer. Carefully remove the mold and top with the succulent shrimp.
  5. For a creamy finish, add a layer of mashed avocado if desired. Finally, sprinkle with sesame seeds and chopped green onions.

Notes

Best served with steamed snap peas or cucumber salad to balance richness. Can substitute brown rice for more fiber or use zucchini noodles for a lighter version.
