A vibrant dish combining succulent shrimp marinated in teriyaki sauce with sweet pineapple over fluffy rice.

  • 1 lb large shrimp, peeled and deveined
  • 1/4 cup teriyaki sauce
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1/2 tsp red pepper flakes (optional)
  • 2 cups cooked white or jasmine rice
  • 1 cup fresh pineapple, diced
  • 1 tbsp sesame oil (for the rice)
  • 2 green onions, chopped
  • 1/4 cup red bell pepper, diced
  • 1 tbsp soy sauce (for the rice)
  • 1 tsp rice vinegar
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Sesame seeds (for garnish)
  • Lime wedges (for garnish)

Instructions

  1. Prepare the Teriyaki Shrimp: In a medium bowl, combine the teriyaki sauce, soy sauce, sesame oil, honey, minced garlic, grated ginger, and red pepper flakes (if using). Add the shrimp and toss to coat evenly in the marinade. Allow the shrimp to marinate for at least 15 minutes to absorb all those wonderful flavors.
  2. Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp, cooking for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the heat and set aside while you prepare the rice.
  3. Add sesame oil to the same skillet over medium heat. Toss in chopped green onions, diced red bell pepper, and fresh pineapple. Sauté for about 2-3 minutes, allowing the vegetables to soften and blend with the pineapple, releasing their flavors.
  4. Add the cooked rice to the skillet, breaking it up with a spatula to avoid clumps. Stir in soy sauce, rice vinegar, garlic powder, and season with salt and pepper. Cook for an additional 2-3 minutes until everything is well mixed and heated through.
  5. Assemble the stack using a ring mold or a small bowl to shape the rice and shrimp. Start with a layer of pineapple rice on the bottom, followed by the teriyaki shrimp. Press gently to form the stack and repeat for as many servings as desired.
  6. Garnish with chopped cilantro, sprinkle sesame seeds on top, and serve with lime wedges on the side. Enjoy immediately!

Notes

For best results, don’t skip the marination step for the shrimp; it’s vital for flavor. Feel free to substitute shrimp with chicken or tofu for different protein options.
