  • 2 cups frozen tater tots
  • 4 large eggs
  • 1 cup beef sausage, cooked and crumbled
  • 1 cup cheddar cheese, shredded
  • 2 green onions, chopped
  • Salt & pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Spread the tater tots in a single layer on a baking sheet and bake according to package instructions, around 20-25 minutes until golden brown and crispy.
  3. While the tater tots are baking, heat a skillet over medium heat. Add olive oil and cook the beef sausage until browned and fully cooked.
  4. In a separate bowl, crack the eggs and whisk with salt and pepper.
  5. Pour the egg mixture into the skillet with the sausage and gently scramble until the eggs are soft but fully set.
  6. Layer the crispy tater tots, scrambled eggs, and sausage in a large serving bowl.
  7. Top with shredded cheddar cheese and chopped green onions. Serve immediately.
