Instructions

  1. In a large bowl, combine flour, granulated sugar, baking powder, and salt; mix until well combined.
  2. In another bowl, whisk together eggs, milk, and vanilla extract until smooth and creamy.
  3. Pour wet ingredients into dry mixture, stirring gently until just combined.
  4. Heat vegetable oil in a fryer or large pot to 365°F (185°C).
  5. Drop spoonfuls of batter into hot oil, frying in small batches for 2-4 minutes until golden brown.
  6. Remove beignets and place on paper towels to drain excess oil.
  7. Once slightly cooled, dust generously with powdered sugar before serving.
