A refreshing and vibrant salad with apples, celery, and walnuts in a creamy dressing, perfect as a side or light main course.

  • 1/2 cup heavy whipping cream
  • 1/4 cup mayonnaise
  • 1 cup diced Granny Smith apples, cored
  • 1 cup diced Gala apples, cored
  • 3/4 cup finely diced celery
  • 1/2 cup halved green seedless grapes, plus extra for garnish
  • 1/2 cup halved red seedless grapes, plus extra for garnish
  • 1/2 cup chopped walnuts
  • 1 tablespoon lemon juice
  • 1 tablespoon granulated sugar

Instructions

  1. In a medium-sized mixing bowl, use a handheld mixer at high speed to beat the heavy whipping cream until stiff peaks form.
  2. Gently fold in the mayonnaise, mixing until well incorporated.
  3. In a large mixing bowl, combine the chopped Granny Smith and Gala apples, finely diced celery, halved grapes, and chopped walnuts.
  4. Sprinkle the lemon juice and granulated sugar over the mixture, stirring gently to coat everything evenly.
  5. Gently fold the mayonnaise mixture into the apple mixture until well combined.
  6. Cover the salad and refrigerate for at least 60 minutes before serving.
  7. Garnish with reserved grapes before serving.

Notes

For added sweetness, consider including dried cranberries or raisins. A sprinkle of cinnamon or nutmeg enhances flavor. Use Greek yogurt instead of heavy cream for a lighter version.
