A delightful and savory bread made with shredded zucchini and cheddar cheese, perfect for any meal or snack.

  • 1 1/2 cups zucchini, shredded
  • 1/4 cup green onion, sliced (optional)
  • 2 large eggs
  • 3/4 cup sour cream
  • 1/4 cup butter, melted and cooled
  • 1 1/2 cups cheddar cheese, shredded
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Combine the shredded zucchini, sliced green onions (if using), eggs, sour cream, and melted butter in a large bowl. Mix well.
  3. Add the shredded cheddar cheese and stir until evenly distributed.
  4. Mix the all-purpose flour, baking powder, baking soda, and salt in another bowl.
  5. Combine the dry ingredients and the wet mixture gradually. Stir gently until just combined.
  6. Prepare a greased 9×5 inch loaf pan, pouring the batter in and smoothing the top.
  7. Bake for 50-70 minutes, or until a toothpick inserted comes out clean.
  8. Cool slightly before slicing and serve warm.
