A delightful and nutritious dish showcasing the natural sweetness of acorn squash, enhanced with warm spices and cooked in an air fryer.

Ingredients

  • 2 acorn squashes
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 320°F (160°C).
  2. Cut the acorn squashes in half and scoop out the seeds.
  3. In a small bowl, mix olive oil, brown sugar, cinnamon, nutmeg, salt, and pepper.
  4. Brush the mixture over the cut sides of the squash.
  5. Place the squashes cut-side down in the air fryer basket.
  6. Cook for 15-20 minutes or until tender.
  7. Serve warm as a side dish.

Notes

For extra flavor, consider adding cayenne pepper or substituting maple syrup for brown sugar.
