Delightful crispy baby gold potatoes infused with wholegrain mustard and garlic, perfect as a side dish.

Ingredients

  • 1.5 lb baby gold potatoes, cut in half
  • 1 tbsp wholegrain mustard
  • 1/4 cup olive oil
  • 12 cloves of garlic, crushed
  • Salt & pepper to taste
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat your air fryer to 400 degrees F.
  2. Combine the wholegrain mustard, olive oil, crushed garlic, salt, and pepper in a small bowl.
  3. Toss the halved baby gold potatoes in the mustard mixture until completely coated.
  4. Place the coated potatoes in the air fryer basket.
  5. Cook for 10 minutes initially, then shake the basket.
  6. Continue cooking for an additional 10-15 minutes until golden brown and tender.
  7. Garnish with fresh parsley before serving.

Notes

For best results, use uniform-sized potatoes. Consider adding herbs or a light spray of oil for extra crispiness.
