A delightful, rustic loaf that creates a gorgeous crust and a light, airy crumb without extensive kneading.

Ingredients

  • 3 cups bread flour (450g)
  • 1 tablespoon white granulated sugar
  • 2 teaspoons dried instant or rapid-rise yeast
  • 1 1/2 teaspoons salt
  • 1 1/2 cups warm water (375ml)
  • 1 tablespoon olive oil

Instructions

  1. Combine the flour, sugar, yeast, and salt in a large bowl. Mix thoroughly to ensure that the ingredients are well distributed.
  2. Add the warm water and olive oil to the dry mixture. Stir until the dough is wet and shaggy; it should not be smooth at this stage.
  3. Lightly spray the top, cover the bowl with plastic wrap, and let it rise in a warm place for 2-3 hours, or until it has doubled in size.
  4. Preheat a Dutch oven in your oven to 450°F (230°C) for about 30 minutes.
  5. Flour the work surface, scrape the dough out onto it, and gently form it into a round shape, being careful not to deflate it too much.
  6. Place the dough on parchment paper, keeping it covered while the oven preheats.
  7. Transfer the dough into the hot pot, cover it with a lid, and bake for 30 minutes.
  8. Remove the lid and bake for an additional 12-15 minutes to achieve a golden-brown crust.
  9. Cool for 10 minutes on a wire rack before slicing to allow the interior to set.

Notes

Serve warm with garlic herb butter or use for sandwiches. Avoid using cold water and rushing the rising process.
