A delightful Asian-inspired dish with tender chicken meatballs in a rich coconut curry sauce, perfect for busy weeknights.

  • 1/2 cup shredded zucchini
  • 2 green onions, chopped
  • 2 shallots, chopped
  • 2 teaspoons grated ginger
  • 1 tablespoon grated garlic
  • 1/4 teaspoon cayenne pepper
  • Black pepper to taste
  • 5 tablespoons tamari or soy sauce
  • 3 tablespoons extra virgin olive oil
  • 1 red bell pepper, sliced
  • 2 tablespoons salted butter
  • 13 tablespoons Thai red curry paste
  • 1 can (14 oz) coconut milk
  • 1/4 cup fresh cilantro, chopped
  • Basil and limes for serving

Instructions

  1. Combine ground chicken, shredded zucchini, green onions, one chopped shallot, ginger, garlic, cayenne pepper, black pepper, and tamari in a mixing bowl. Mix until combined.
  2. Form the mixture into tablespoon-sized meatballs, gently rolling them.
  3. Heat a skillet over medium-high heat and add two tablespoons of olive oil. Place the meatballs into the hot skillet and sear until golden brown, about 4-5 minutes.
  4. Remove the meatballs and set them aside on a plate.
  5. Add one tablespoon of olive oil, remaining shallot, garlic, ginger, sliced bell pepper, salted butter, and Thai red curry paste to the skillet. Sauté for about two minutes.
  6. Stir in coconut milk and remaining tamari, creating a rich sauce.
  7. Return the meatballs to the skillet and let simmer gently for 5 minutes.
  8. Stir in fresh cilantro before serving.
  9. Serve over rice, garnished with basil, green onions, and lime.
