  • 1/4 teaspoon dried oregano
  • Pinch of red pepper flakes
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 cup olives
  • 1/2 cup chopped sun-dried tomatoes or marinated roasted tomatoes
  • 1 garlic clove, thinly sliced
  • 6-ounce block of feta cheese
  • Chopped fresh herbs like parsley, oregano, thyme, or basil for garnish
  • Toasted baguette slices or crackers for serving

Instructions

  1. Preheat your oven to 375 degrees F and adjust the rack to 4-6 inches from the broiler.
  2. Mix the olive oil, dried oregano, red pepper flakes, kosher salt, and black pepper in a small bowl until well combined.
  3. Combine the olives, chopped sun-dried tomatoes, and thinly sliced garlic in a medium-sized bowl.
  4. Place the block of feta cheese in a small baking dish, leaving space for the olives and tomatoes to surround it.
  5. Spoon the tomato and olive mixture around the feta, then drizzle the olive oil mixture generously over everything.
  6. Bake in the preheated oven for about 15-18 minutes until the edges of the feta begin to brown.
  7. Switch on the broiler and broil for an additional 2-3 minutes until bubbly and golden.
  8. Finish by sprinkling fresh herbs over the dish before serving warm with toasted baguette slices, crackers, or pita chips.

Notes

Use high-quality extra virgin olive oil for best flavor. For a creamier texture, add a splash of heavy cream before baking.
