A luscious dessert that combines the rich flavors of traditional baklava and creamy cheesecake with layers of flaky phyllo pastry, aromatic spices, and nutty pistachios.

  • 1 1/2 cups finely chopped pistachios
  • 1 tsp cinnamon
  • 1/4 cup granulated sugar
  • 1/2 cup melted butter
  • 8 sheets of phyllo dough
  • 3 (8 oz) blocks of cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/4 cup honey
  • 1/2 cup sour cream
  • 1/3 cup honey, warmed for drizzling
  • 1/2 cup chopped pistachios for topping

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a springform pan.
  2. Layer four sheets of phyllo dough in the bottom of the pan, brushing each with melted butter.
  3. In a mixing bowl, combine finely chopped pistachios, cinnamon, and sugar. Sprinkle half of this mixture over the phyllo layer.
  4. Layer another four sheets of phyllo over the nut mixture, brushing each with melted butter.
  5. Add the remaining nut mixture on top.
  6. In a separate mixing bowl, beat the cream cheese and granulated sugar until smooth.
  7. Incorporate eggs one at a time, mixing well after each addition.
  8. Add the vanilla, honey, and sour cream, stirring until fully combined.
  9. Pour the cream cheese mixture over the baklava crust.
  10. Bake the cheesecake for 55–65 minutes until the center is set with a slight jiggle.
  11. Allow the cheesecake to cool completely at room temperature.
  12. Just before serving, drizzle warm honey over the top and sprinkle with chopped pistachios.

Notes

Ensure ingredients are at room temperature for a smooth filling. Don’t rush the cooling step; this is key for texture. Cover unused phyllo dough with a damp cloth to prevent drying out.
