Balsamic Steak Gorgonzola Salad with Grilled Corn

A delightful salad combining tender steak, rich Gorgonzola cheese, and sweet grilled corn on a bed of mixed greens.

Ingredients

  • 1 lb Sirloin steak
  • 2 tbsp Basil leaves
  • 1 cup Cherry tomatoes
  • 1 Corn on the cob
  • 2 heads Endive lettuce
  • 1 clove Garlic, minced
  • 1/4 tsp Garlic powder
  • 6 cups Mixed spring greens
  • 1 tbsp Lemon zest
  • 2 tbsp Parsley, chopped
  • 1/2 Red onion, thinly sliced
  • 5 tbsp Balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1/4 tsp Black pepper, ground
  • 1/2 tsp Coarse salt
  • 1 Dash Salt and fresh ground black pepper to taste
  • 13/16 cup Extra virgin olive oil
  • 4 oz Gorgonzola cheese

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the steak generously with coarse salt and freshly ground black pepper.
  3. Grill the steak for 4-5 minutes on each side until done; let rest for 5 minutes.
  4. Grill the corn until cooked and lightly charred, about 10 minutes.
  5. Make the vinaigrette by whisking balsamic vinegar, Dijon mustard, Worcestershire sauce, garlic, garlic powder, lemon zest, and olive oil.
  6. Assemble the salad by combining mixed greens, cherry tomatoes, red onion, and grilled corn.
  7. Finish with sliced steak, crumbled Gorgonzola, and parsley.
  8. Serve immediately, garnished with extra lemon zest if desired.

Notes

Feel free to prepare the steak and corn ahead of time but assemble just before serving for freshness.
