  • 1 teaspoon cumin
  • 1/2 teaspoon paprika

  • 1 cup shredded cheddar cheese
  • 1/2 cup refried beans (optional)
  • 4 large flour tortillas
  • Vegetable oil for frying
  • Sour cream, salsa, and guacamole for serving (optional)

Instructions

  1. Begin by preparing your filling: heat a skillet over medium heat and add the ground beef. Cook until browned, breaking it apart with a spatula to ensure even cooking.
  2. Drain any excess fat to keep your chimichangas from becoming greasy.
  3. Add the chopped onion and minced garlic to the skillet, cooking until the onions become translucent and fragrant.
  4. Now it’s time to infuse flavor: stir in the chili powder, cumin, paprika, salt, and pepper.
  5. Once the spices are well incorporated, melt in the shredded cheddar cheese and optional refried beans.
  6. With the filling ready, lay a flour tortilla flat on a clean surface.
  7. Spoon a generous amount of the beef filling into the center, being careful not to overstuff.
  8. Fold the sides of the tortilla towards the center and carefully roll it up from the bottom.
  9. In a deep skillet, heat vegetable oil over medium-high heat.
  10. Fry the chimichangas in batches until they turn golden brown and crisp on all sides, about 3-4 minutes per batch.
  11. Use a slotted spoon to transfer the fried chimichangas to a paper towel-lined plate to drain excess oil.
  12. Serve immediately with sour cream, salsa, and guacamole.
