  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups red enchilada sauce
  • 8 corn tortillas
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Begin by heating a skillet over medium heat, then add the ground beef. Break it apart as you cook until it turns beautifully browned. Drain any excess fat.
  2. Next, toss in the diced onion and minced garlic. Sauté for 3-4 minutes until the onion becomes translucent.
  3. Now stir in the chili powder, ground cumin, salt, and black pepper. Pour in 1 cup of the enchilada sauce, letting it simmer for about 5 minutes.
  4. Preheat your oven to 375°F (190°C) while you grease a 9×13-inch baking dish.
  5. Begin layering by spreading a bit of enchilada sauce on the bottom of your dish. Place a layer of tortillas over it, followed by half of the beef mixture, half of the rinsed black beans, and a sprinkle of the cheeses. Repeat this process.
  6. Cover the dish with foil and bake for 20 minutes, then uncover and continue baking until the cheese is golden and bubbly, about 10-15 minutes more.
  7. Once out of the oven, allow to cool for 10 minutes. Garnish with fresh cilantro if desired.
