A mouthwatering Beef Enchilada Casserole layered with seasoned ground beef, black beans, and melty cheese, perfect for family gatherings.

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups red enchilada sauce
  • 8 corn tortillas
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Begin by heating a skillet over medium heat. Once hot, add the ground beef, browning it thoroughly while draining any excess fat.
  2. Next, introduce the diced onion and minced garlic. Sauté for about 3-4 minutes.
  3. Stir in the chili powder, cumin, salt, and black pepper. Pour in 1 cup of enchilada sauce and let simmer for approximately 5 minutes.
  4. Preheat your oven to 375°F (190°C) while greasing a 9×13-inch baking dish.
  5. Assemble the casserole by layering the bottom with enchilada sauce, corn tortillas, half of the beef mixture, half of the black beans, and cheese. Repeat the layers, finishing with tortillas and enchilada sauce.
  6. Cover the baking dish with foil and bake for 20 minutes. Then, remove the foil and continue baking until the cheese is golden brown, about 10-15 minutes more.
  7. Let the casserole cool for about 10 minutes before serving. Garnish with cilantro if desired.

Notes

Consider adding a layer of sautéed bell peppers or corn for added sweetness. You can also experiment with different types of cheese based on your preference.
