A comforting dish that combines caramelized onions, tender beef, and creamy cheese in a warm noodle embrace.

  • 1 lb beef stew meat
  • 2 large onions, sliced thinly
  • 3 cups beef broth
  • 1 tablespoon olive oil
  • 2 cloves minced garlic
  • 1 teaspoon thyme
  • 1 tablespoon Worcestershire sauce
  • 8 oz egg noodles
  • Salt and pepper to taste
  • 1 cup shredded Swiss cheese
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Once hot, add your thinly sliced onions.
  2. Stir frequently, allowing the onions to cook down and become wonderfully caramelized, about 15 to 20 minutes.
  3. Brown the beef stew meat in a separate pot over medium-high heat for about 5 minutes.
  4. Combine the caramelized onions with the beef in the pot, adding beef broth, thyme, Worcestershire sauce, salt, and pepper. Stir together.
  5. Lower the heat and let the mixture simmer for 60 to 90 minutes until the beef is tender.
  6. Prepare egg noodles according to package instructions, then drain and set aside.
  7. Stir the cooked noodles into the beef mixture, adjusting seasoning as necessary.
  8. Top the dish with shredded Swiss cheese and cover until melted.
  9. Garnish with fresh parsley before serving.

Notes

Be patient while caramelizing onions to develop their natural sweetness. Taste and adjust seasoning as you go.
