Delicious Berry Cream Cheese Muffins combining fresh berries and a creamy cream cheese filling, perfect for brunch or dessert.

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/2 cup mixed berries (blueberries, raspberries, or strawberries)
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract (for cream cheese filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare the muffin tin with liners or grease them well.
  2. Mix together the flour, baking powder, baking soda, salt, and granulated sugar in a large bowl.
  3. Combine the wet ingredients: egg, milk, melted butter, and vanilla extract in another bowl.
  4. Stir the wet mixture into the dry ingredients gently until just combined.
  5. Fold in the mixed berries carefully.
  6. Mix the cream cheese, powdered sugar, and 1/2 tsp of vanilla extract until smooth.
  7. Fill each muffin cup with batter, add a dollop of the cream cheese mixture, and top with more batter.
  8. Bake for 18-22 minutes or until a toothpick comes out clean.
  9. Cool in the pan for a few minutes before transferring to a wire rack.
