A delightful and healthier twist on traditional cheesecake, combining creamy cottage cheese with fresh mixed berries for a sweet and tangy dessert.

  • 1 1/2 cups creamy cottage cheese
  • 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tbsp honey
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the graham cracker crumbs, melted butter, and 1 tablespoon of sugar in a mixing bowl. Mix well until the crumbs are evenly coated.
  3. Press the mixture into the bottom of a springform pan to create a crust. The crust should be firm and even.
  4. Blend the cottage cheese, honey, Greek yogurt, eggs, vanilla extract, lemon juice, and the remaining sugar until smooth.
  5. Pour the cheese mixture over the crust in the springform pan, spreading it evenly.
  6. Bake for 45-50 minutes until set and lightly golden. Let cool for an hour.
  7. Mix fresh berries with 1 tablespoon of honey and spoon over the cooled cheesecake.
  8. Chill in the refrigerator for 2-3 hours before serving.

Notes

For best results, use fresh ingredients and ensure the cottage cheese is well blended. Allow sufficient cooling and chilling time for perfect texture.
