A luscious cheesecake featuring creamy cottage cheese and vibrant fresh berries, perfect for any occasion.

Ingredients

  • 1 1/2 cups cottage cheese
  • 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tbsp honey
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the graham cracker crumbs, melted butter, and 1 tablespoon of sugar in a mixing bowl.
  3. Press the mixture firmly into the bottom of a springform pan.
  4. Blend the cottage cheese, honey, Greek yogurt, eggs, vanilla extract, lemon juice, and the remaining sugar until smooth.
  5. Pour the filling over the crust in the springform pan.
  6. Bake for 45-50 minutes until set and lightly golden on top.
  7. Let it cool at room temperature.
  8. Mix the fresh berries gently with 1 tablespoon of honey.
  9. Spoon the berry mixture over the cooled cheesecake.
  10. Chill in the refrigerator for 2-3 hours before serving.
