Delightful muffins combining fresh berries and cream cheese for a sweet treat, perfect for any time of day.

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/2 cup mixed berries (blueberries, raspberries, or strawberries)
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract (for cream cheese filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare the muffin tin with liners or grease.
  2. Whisk together the flour, baking powder, baking soda, salt, and granulated sugar in a large bowl.
  3. Combine the wet ingredients in another bowl: the egg, milk, melted butter, and vanilla extract.
  4. Stir the wet mixture into the dry ingredients gently until just combined.
  5. Fold in the mixed berries carefully.
  6. Mix the softened cream cheese, powdered sugar, and 1/2 tsp of vanilla extract until smooth.
  7. Spoon some muffin batter into each cup, then add a dollop of the cream cheese mixture.
  8. Top with more batter until the cups are about three-quarters full, swirling gently for marbling.
  9. Bake for 18-22 minutes until a toothpick inserted comes out clean.
  10. Cool in the pan before transferring to a wire rack.

Notes

Consider adding chopped nuts or mini chocolate chips for extra flavor. Store in an airtight container for up to three days or freeze for up to three months.
