A delightful blend of creamy richness and fruity brightness, this Strawberry Swirl Cheesecake is perfect for any dessert occasion.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/2 cup strawberry puree (fresh or frozen strawberries blended)
  • 2 tablespoons sugar (for the strawberry swirl)
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Mix the graham cracker crumbs, 1/4 cup of sugar, and melted butter until well combined.
  3. Press the mixture firmly into the bottom of a springform pan.
  4. Bake the crust for 10 minutes and then let it cool completely.
  5. Beat the softened cream cheese until smooth.
  6. Add 1 cup of granulated sugar and vanilla extract, continuing to beat until silky.
  7. Incorporate the eggs one at a time, blending well.
  8. Stir in the sour cream until smooth.
  9. Mix the strawberry puree with 2 tablespoons of sugar and lemon juice.
  10. Pour the cream cheese mixture over the cooled crust.
  11. Dollop the strawberry puree over the cheesecake and gently swirl.
  12. Bake for 55 to 60 minutes; the center should be slightly jiggly.
  13. Turn off the oven and leave the cheesecake inside to cool for one hour.
  14. Chill in the refrigerator for at least 4 hours or overnight before serving.
