A delightful lemon loaf bursting with zesty flavor, perfect for a mid-afternoon pick-me-up or an after-dinner treat.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • Zest of 2 lemons
  • 2 tablespoons fresh lemon juice
  • 1/2 cup whole milk
  • 1 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare a loaf pan by greasing it with butter and dusting it with flour, or line it with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes.
  4. Add the eggs, one at a time, mixing well after each.
  5. Stir in the lemon zest and lemon juice.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the whole milk. Mix just until combined.
  7. Pour the batter into the prepared loaf pan and smooth the surface with a spatula.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  10. Whisk the powdered sugar and lemon juice together until smooth and drizzle over the cooled loaf.

Notes

To enhance flavor, use a microplane grater for lemon zest and ensure ingredients are at room temperature. Avoid overmixing to keep the loaf light.
