A delightful dessert combining rich chocolate and cherries in a charming spiral cake, perfect for any occasion.

  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Powdered sugar (for dusting)
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 cup cherry pie filling
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper, lightly greasing the edges.
  2. Whisk together the eggs and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Sift together the all-purpose flour, cocoa powder, baking powder, and salt. Fold this dry mixture into the egg mixture gently.
  4. Pour the batter into the prepared pan, spreading it evenly, and bake for 10-12 minutes.
  5. Dust a clean kitchen towel with powdered sugar.
  6. Remove the cake from the oven, flip it onto the prepared towel, and peel off the parchment paper.
  7. Roll the cake up in the towel while warm and allow it to cool completely.
  8. Whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  9. Unroll the cooled cake and spread the whipped cream evenly over the surface. Add the cherry pie filling on top.
  10. Roll the cake back up tightly without the towel, dust with powdered sugar and chocolate shavings before serving.

Notes

For a quicker version, consider using store-bought cherry filling and whipped topping. Make sure to roll the cake while it’s warm to prevent cracking.
