A delightful dessert combining rich chocolate cake with whipped cream and cherry pie filling, presented in a stunning roll form.

Ingredients

  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Powdered sugar (for dusting)
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 cup cherry pie filling
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper, lightly greasing the edges.
  2. Whisk together the eggs and granulated sugar in a large mixing bowl until light and fluffy, about 3-4 minutes.
  3. Sift together the all-purpose flour, cocoa powder, baking powder, and salt, then gently fold into the egg mixture.
  4. Pour the batter into the prepared pan, spreading it evenly, and bake for 10-12 minutes until a toothpick inserted comes clean.
  5. Dust a clean kitchen towel with powdered sugar while the cake bakes.
  6. Remove the cake from the oven, flip it onto the towel, and peel off the parchment paper.
  7. Roll the cake up in the towel while warm, and let it cool completely.
  8. Whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  9. Unroll the cooled cake gently, spread whipped cream, and add cherry pie filling.
  10. Roll the cake back up tightly, without the towel, and dust with powdered sugar and chocolate shavings to serve.

Notes

For an elevated flavor, add almond extract to the whipped cream and consider drizzling melted dark chocolate on top before serving.
